The problem lies with your not being able to
view the entire frame you intend to capture (in sections),
as you focus and tilt.

So you must continuously adjust - shift - focus - adjust - shift - focus - 
etc.
until you arrive at something close to what you're looking for.

Even with a view camera we must essentially do the same thing;
though we're able to view the entire frame as we're doing it.

What you're really looking for is a something like a 3.25" x 4.25" sensor 
back.
