The guy I was thinking of is Vic Muniz - a Brazilian artist turned photographer. I saw his stuff - a beans and coffee portrait of Che Guevara - at a Sotheby's auction in Paris and I thought it was excellent. Unfortunately, too excellent for my wallet at the time.
