Age. The emulsions are exactly the same.
Pro Kodachrome is released when it has aged to the design point re:
colour response, whereas as amateur Kodachrome is released 'green'
and intended to sit on room-temperature shelves for a couple of
months until it reaches the same point.
If you buy 'fresh' amateur Kodachrome, you should let it sit for
about 6 months at room temperature, test it to determine that it's
what you want _now_ and freeze the rest, thawing it as you need it.
That way you'll get the best of both worlds; cheaper Kodachrome,
tested and tried and consistent.
Even if you get a couple of bricks of pro Kodachrome, you should test
a roll to see if the colour response suits you needs, or what
filtration may be needed.
Speed variations will also be noticed, as film is generally released
with a +/- 1/3 stop variation (but is usually better than that now).
