Habanero, that's what it's supposed to be! :) Actually, the tradition here is to cook them in dill. They should be whole. Then everyone meets, puts on silly hats, some good seasoned cheese, bread and butter ... and a liberal amount of vodka (which may be spiced with cummin or some other spice or herb). You break off the tail, pull back the back, wipe out the "butter" in there. Crack open the tail. Drink a shot of vodka and go back to start. After about a dozen crayfish (and shots) everyone is feeling kind of happy. I do like them with peppar as well (we import from all over, but nothing beats the Louisiana stuff for flavor). Now I'm hungry.
